Potato Wedges

What you need:

  • 800g Baking Potatoes
  • 2 Tbsp Extra Virgin Olive Oil
  • ½ Tbsp Herbes de Provence
  • 1 Tbsp Turmeric Powder
  • Sea Salt & Pepper (To Taste)

Method:

If, like me, you’re a potato lover, you’re gonna love this one!

Peel and wash the potatoes. Cut them evenly into medium sized wedges and soak them in cold water for at least 45 minutes.

Preheat oven to 200 degrees Celsius.

Drain the potatoes and pat them dry.

Put them in a bowl and add the olive oil, salt, pepper, turmeric and herbes de provence, toss and massage them well.

Lay them on a non-stick oven tray and bake them for 30 minutes.

Larger wedges might take longer. You can test one with a fork.

Serve them hot!

These bad boys are perfect as a side dish or even on their own!

What I like about this recipe is that it’s so versatile; you can adapt it to your liking very easily. You can make the wedges skinny, they’ll come out crispy, or cut them chunky and they’ll come out soft inside with crispy skin. You can grate some Parmesan before serving or sprinkle some chili flakes if you like them spicy!
