Oven Baked Cod Fillets

Serves 4

Prep Time: 20′

Cooking Time: 30′

What you need:

  • 3 or 4 Large Cod Fillets
  • 1 Lemon thinly sliced
  • 2 Tbsp Extra Virgin Olive Oil
  • Sea Salt & Pepper
  • 1 Large Rosemary twig

Method:

Preheat oven to 200 degrees Celcius.

Choose an oven safe dish (non-stick is best) and use one tbsp of olive oil to grease it. Place the fish fillets in the dish, drizzle the other tbsp of olive oil and add the salt and pepper and massage the fillets. Decorate the borders with the lemon slices, they will give the dish an excellent zest! Cut the rosemary twig into many and place them on the fillets.

Cook in the oven for 20 minutes.

Serve hot.

I served mine with a side of greens and oven potatoes!

For the greens, I usually sauté kale, spinach and broccolini with some avocado oil, sprinkle with sea salt and pepper and squeeze some lemon to give it that kick!

As for the potatoes, I soak them in cold water for at least 30 minutes, then pat dry them, mix them with some olive oil, sea salt and pepper and bake them for 25 minutes. (you can spice them up with any spices or herbs)
