What you need:
- 500g Monkey Nuts in Shell
- 1 Tbsp Extra Virgin Olive Oil
- Few Lime Leaves
De-shell the nuts.
You can get rid of the skin, however I like to keep them, they tastes amazing after roasting.
Preheat the oven to 200 degrees Celsius.
Cut the lime leaves into thin slices and add them to the nuts bowl along with 1 Tbsp of extra virgin olive oil and some salt. I used Himalayan salt here.
Remember, using 100% salt is better than refined and processed. I always use Himalayan or Celtic.
Mix them well together and lay them on a non-stick roasting tray and put them in the oven for 10 minutes, shaking the tray halfway.
Take them out, let them cool and enjoy them with a nice cold Mimosa! Or any drink actually!
The lime leaf scent is just incredible!
