Greek Salad

Serves 4 to 5

Prep Time: 20’

What you need:

  • 2 x Sweet Gem or Romaine Lettuce
  • ½ a long Cucumber
  • 2 Spring Onions, sliced
  • 4 x Tomatoes
  • 6 to 8 Pieces of Sundried Tomatoes, chopped
  • 10 x Giant Capers, halved
  • Handful of Green Olives
  • 100g Feta Cheese, chopped or crumbled
  • ½Tbsp Ground Black Pepper
  • 1Tsp Dried Thyme


  • Olive Oil
  • Lemon Juice
  • Salt and Pepper to taste



Wash and prepare all your ingredients. Put them in a large salad bowl, pour the dressing over, mix well and enjoy with a slice of toast and a glass of cold white wine; or Pita bread or whatever you like!


It’s super refreshing! Reminds me of our Greek visits before we became parents! Ha!
