What you need:
For The Dough:
- ½ Cup Wholemeal Flour
- ½ Cup Porridge Oats
- ½ Cup Desiccated Coconut
- ½ Tsp Sea Salt
- 1 Mashed Banana
- 1 Egg
- 1 Tbsp Peanut Butter
- 1 Tsp Baking Powder
- 3 Tbsp Soft Butter
- 1 Tsp Vanilla Extract
For The Filling:
- 70g Dates, chopped
- 2 Tbsp Coconut Sugar
- 1/3 Cup Water
I’ve been wanting to create a healthy sweet snack for M for a while now. I never had the courage to be honest, I am not into sweets much and I haven’t yet succeeded in making The Cake! But I always have these ingredients at home and I thought, I’m going to try, if I don’t I won’t ever know right??
The result was super surprising! M has had 3 balls so far! They must be good right??
Here’s how you make my Date filled Banana Coconut & Oat Balls!
And you’re so hiding healthy stuff in there that kids usually don’t like eating (evil laugh)
And if you don’t want peanut in there just skip the peanut butter!
Preheat your oven to 180 degrees Celsius.
Start by making the dates filling because you need it at room temperature so you don’t burn your hands when making the balls.
Put your chopped dates, the coconut sugar and the water in a small saucepan and bring to a boil, reduce by half and blend using a hand mixer. It will form a thick paste. Leave on the side.
Mix all the dough ingredients together, using your hands for best results.
You’re going to be making the balls anyway, so get your hands dirty!
Start forming the balls: take approximately a tablespoon of the mixture, flatten it on the palm of your hand, put some date filling inside, equivalent to a tsp, and roll the dough and form the ball and place onto a non stick oven tray.
This recipe makes 15 balls. Put the tray in the oven, on the middle rack and bake for 40 minutes.
Once done, put them on a cooling rack and enjoy them warm or cold!
