Chickpea & Tuna Salad

Serves 4 to 5

Prep Time: 20’

What you need:

  • 2 Medium Sized Romaine Lettuces
  • 1 Can of Chickpeas (400g)
  • 1 Can of Tuna in brine
  • 10 Pieces of Sundried Tomatoes
  • 1 Medium Cucumber, cut into cubes
  • 1 Green Apple, cut into cubes
  • 2 Spring Onions, finely sliced
  • 4 to 5 Fresh Basil Leaves, chopped
  • ½Tbsp Ground Black Pepper

Dressing: Olive Oil & Lemon

  • Olive Oil
  • Lemon Juice
  • Salt and Pepper to taste
  • Cayenne Pepper (Optional)

 

Method:

Wash and prepare all your ingredients. Put them all in a large salad bowl, pour the dressing over, mix well and enjoy with a slice of toast and a glass of cold white wine; or Pita bread or whatever you like!

You can tell I have an addiction to chickpeas, and tomatoes haha!
