What you need:
- 2 Large Fresh Mozzarella Cheese Balls
- 2 Avocados
- 2 Beef Tomatoes
- Handful of Fresh Basil leaves, chopped, and a few to decorate
- ½ Tbsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- Sea Salt & Pepper
- 2 Round Molds
Generally Caprese Salad is made of Mozzarella, Tomatoes and Fresh Basil. I like to add avocados to it, it just makes it much tastier and I happen to love avocado!
Prepare 2 plates with one round mold in each.
Take one avocado, cut it in half, remove the seed, peel it and thinly slice it. Start filling the molds with the avocado slices, pile them on top of each other and turn the mold as you go, no need to oil the molds, avocado is slippery enough.
Cut the tomatoes and the mozzarella balls into cubes, put them in a bowl with the chopped basil leaves, the olive oil, the balsamic vinegar and salt and pepper and mix them with a spoon.
Fill the molds with the salad mixture and squeeze as you go to make room for more.
Peel the second avocado, remove the seed and cut into cubes.
Decorate your molds with avocado cubes and a few basil leaves.
Drizzle some Olive oil on top.
Sprinkle some more salt and pepper.
